At a high level, NLP parses data, understands synonyms and antonyms, syntax, and language independence, and looks for similarity and context. NLP also identifies entities, including the actor, noun, or important parts of the text.
In terms of implementation, an organization needs to ingest content, build a library of sentences, words, and content, and assess individual word sets to start understanding them. Words are stemmed, and their lineage is understood to keep the structured meaning of the content.
